Beet juice is beautiful, isn’t it? That vibrant pinkish red color is so striking. It’s surprising that it comes from such a low-key, earthy, root vegetable. Beets are somewhat of a superfood. They are thought to strengthen your immune system, combat high blood pressure, provide valuable antioxidants, and even positively affect blood cholesterol levels. As for nutrients, they contain a good amount of folate, magnesium, and potassium.

This juice, oh this juice. It is so good– so crisp and full of raw flavor.

This veggie-packed juice is relatively low in sugar, super fresh, and is quite the immune boosting drink!

Oh, and guess what else? You can EAT BEET STEMS & GREENS! No need to waste the beautiful leaves. Chop them up in a salad. Saute them and add them to spaghetti sauce. Use them in soups, stews, or wash, freeze and save them for later.

A note on juicing: I don’t juice things often because I would rather eat the whole fruit or vegetable. Why? In the peel/skin or just underneath it, is where most of the fiber is. Juicing removes the peels and consequently most of the fiber. I do still love making and drinking my own juice because it is delicious and I know exactly what is going into it–no preservatives or artificial colors, please. Just be sure to eat your whole fruits and veggies and not completely replace them with juice. Ok, I’m getting off my soap box now.

I used the Hamilton Beach Juice Extractor. Perfection. I’ve juiced all kinds of fruits and veggies and they have all been delicious! You just place the chopped produce in the top, turn on the juicer, and gently push down until IT IS ALL JUICE, BABY. Ingredients
  • 2 1/2 cups beets (2-3 medium sized beets)
  • 1 whole medium cucumber
  • 2 whole small lemons
  • 2 inch cube ginger
Instructions
  1. Chop the beets, cucumber and ginger. It is okay to leave the peels on the beets and cucumber. Your juicer will do a good job of removing them.

  2. Remove the skins from the lemons. It’s okay if most of the pith (white covering under the skin) stays on the lemon.

  3. Run all ingredients through your juicer and refrigerate or freeze your juice. It will keep for a few weeks in the refrigerator and a few months in the freezer. 

Recipe Notes

*The lemons do make this juice a little tart. If puckering isn't your style, you can still use this recipe. Just juice an apple (or two) along with the beets, ginger, lemon and cucumber. The difference one apple makes is surprising.

** FYI: The actual recipe contains a few less grams of carbs and fiber than what is represented in the label. Juicers remove the peels. I was not able to to find unpeeled beets when I was creating this label. It won't make a huge difference (probably a matter of 10-15 calories) since I found the unpeeled versions of everything else.
